Motorcycle Monster Waffles, Eggs and Fruit

(easy with a waffle iron)



If you have a large group of riders ready to get out on the highway and you have anything to do with getting them fed before the big ride, waffles with sausage or bacon is always a great and easy way to get them going in style and in a hurry. Add some fried eggs and you'll be the most popular guy/gal of your group. If the group is large, I usually just offer eggs scrambled and pre cook and keep warm. But if you have a little help and plenty of time, cook the eggs to order.

Of course, with the health conscious group, you'll be well advised to have a couple of healthy choices in the fruit and grain areas for those watching their waistlines.

Most any electric waffle irons will work, but my favorite is a belgium deep style waffle served with real maple syrup. Most any good grocer will have some type of fresh maple syrup from Maine or Vermont and you'll be the hit of the party. Another great touch is buy a little whipping cream and offer your buddies real whipped cream along with your top shelf waffle. Reddy Whip or Cool Whip will work but the idea of whipping your own cream with a hand mixture will impress your friends with your style and teriffic taste. Recently, I had a big breakfast at the Monster Ranch and had fresh blue berries and strawberries. With those fresh berries, even my "bratty kids" rolled their eyes with approval. The berries can be prepared ahead.

It does take about 4 or 5 minutes to cook a great waffle so I usually plan for 2 irons if the crowd is large. With two irons, I can cook waffles faster than you can say Fatboy, so bring on the rowdy hungry bikers.

Also , remember, not everyone is up for the "mega calorie" waffle, so some of the really calorie counters will pass. I also always try to have some fresh fruit around for those folks who do the right thing. Bananas, pears, apples, and oranges always go well, and many will opt for some oatmeal or dry cereal and that's always a snap.

The only problem with this breakfast table, is they'll try to make you the full time cook, so be careful.

Chocolate Chip Belgian Waffles
(White chocolate, M and M's, or pecans can be interchanged)

Quick and Easy Recipe:

Ingredients:
2 Cups Original Bisquick mix (Be sure the box is fresh)
1 1/3 cup of whole milk or butter milk (butter milk is better)
2 tbsp of melted butter or vegetable oil (melted butter is better)
1 Large Egg
1/4 cup of semi sweet chocolate chips (room temperature) or milk chocolate (your choice)
1 tsp of vanilla extract (secret ingredient)

Procedure:
1. Stir ingredients until blended fully. (hand wisk or hand mixer will do)
2. Preheat iron to the ready heat position
3. Spray waffle iron with Pam non-stick
4. Pour mixture into center of hot iron (Don't over fill iron)
5. After filling, turn iron over if possible while cooking (I prefer turn-over style irons)
6. Cook for 4 or 5 minutes until steaming stops

Have a room temperature butter bowl ready with a brush for basting while hot
Add butter, maple syrup, while hot (syrup warmed is also great) ...then add fresh whipped cream, and fruit as per taste of guest.

Oh, by the way, Be sure to eat while hot...
